Factory thawing SOPs: Preserving collagen elasticity
Processors must thaw frozen raw maw in circulating chilled water at 4°C–8°C over 12 hours. Rapid hot-water thawing must be avoided as it denatures raw collagen, causing outer skin sloughing during subsequent drying.
De-fatting and vascular membrane removal
After thawing, technicians scrape the peritoneal membrane and trim fat pockets using blunt scrapers in ice-cooled water before mounting maws on drying screens.
