Moisture verification protocols
Importers must test cartons using calibrated digital moisture meters. Samples from multiple carton depths should consistently read below 14% to guarantee stability against fungal growth.

Visual and olfactory inspection
Quality dried maw has a clean translucent amber color without blood clots, black spots, or mold traces. The smell should be clean marine sea breeze, never rancid, sour, or chemical.

Testing for chemical treatments
Unscrupulous sellers bleach maw with hydrogen peroxide or use sulfur dioxide to artificially lighten color. Pure export lots are certified free of chemical washes with lab test reports.
