What grade is really measuring
Grade reflects a combination of size, thickness, color, dryness and uniformity. Higher grades command higher wholesale prices because they offer more consistent presentation and yield.
AAA, AA and A in practice
AAA lots are individually checked for uniform color, thickness and shape. AA offers very good consistency at a more moderate price. A is a solid commercial grade with minor variation.
Grade vs size
A large piece can be low grade and a small piece can be high grade. Always specify both size range and grade; they are separate commercial dimensions.
Grading per lot
Natural variation between catches means lot-to-lot grading must be consistent. Reputable processors maintain fixed grading criteria rather than adjusting definitions by harvest.
